Pie

I just made some individual blackberry pies for little gifts, and I gotta reiterate: this recipe rocks AND you need just 7 ingredients, and that’s if you want to make your own crust!

I was Emily and the Machine today man. 4.5 pounds of peaches canned, three small pies made, kids happy, dog bathed, and I even did my hair and exercised, unfortunately in that order. Say what? Like I said, Emily and the Machine. I suspect that when T gets home Wednesday night, such will no longer be the case (especially since he then leaves again at 6:45a the next morning), but I’m embracing it tonight.

Off to read. Tomorrow I will make some individual pecan-oatmeal pies (this recipe is also insanely good and easy, and I will share it with you) to finish off the end-of-school gift list, and also plan to grill some King salmon. Thinking of a wild rice pilaf on the side, or maybe this kale-quinoa recipe I saw on food52. Kale + quinoa= yum and healthy.

Do y’all eat quinoa? It is easy, awesome, and per someboday, a ‘superfood.’ I have a great recipe for quinoa with dried apricots, pistachios and a lime-mirin dressing…
