Super easy dessert, ratatouille gone springy

If you read Em-i-lis with any regularity, you probably know that I looooove the little champagne mangoes (aka Ataulfo) that are in season right now. I just waxed rhapsodic about them last night. If you want something more along the lines of dessert AND like extremely simply recipes, look no further. 4 ingredients, a grill, 5 minutes, voila: Grilled Mango Sundae for Adults!

I will post the recipe, but in essence, you briefly grill the mango, cube it over vanilla ice cream, drizzle with Amaretto and serve with amaretti (those fab, lighter-than-air Italian cookies) or toasted almonds.

I was also inspired to make some roasted vegetables with a spring in their step. Pretty, huh?
