Making Roux

This is, perhaps, the best batch of gumbo I've ever made. Thick, rich, with a real depth of flavor, it's truly divine. Jack is scarfing it down right now. It starts with a great roux which can feel intimidating if you've not made one before. In fact, it just takes some time and attention. This video shows you how, from roughly start to finish.
