Fresh ricotta

It's just sublime. Here is today's batch, draining its delicious whey through cheesecloth. As I've learned, don't toss the whey! I love to make my rice pudding with it, but other uses are oatmeal and polenta. And then there is the pillowy, ethereal bowl o' curds in which you can indulge. One of my favorite breakfasts is a 1/2 c or maybe 3/4 of the ricotta topped with honey and walnuts. Of the gods!
