Daube de Boeuf, using the larding needle!, making beef broth

Whoa, seems it's the day o' the (grass-fed, kindly cared for and slaughtered) cow over here. But it's coldish, gray and rainy and a beef stew sounded magnificent. I didn't have time to start it until nearly 5p, so we'll have to enjoy it for dinner tomorrow, but boy will it be good then. Right now, I'm blanching bacon to thread through the beef cubes with the larding needle I so excitedly purchased in Philly but have not yet used. Concurrently, I'm going to attempt homemade beef stock for a French onion soup later in the week. Mamma mia! It all sounds so good. Hope you're cooking and/or eating well.
