Such progress, and amen for it

Today was another marathon, T is in NY for another night -surprise!- but I was hell-bent on successfully crossing off my cooking to-dos from the mental list on which they hovered. Thusly:

  • make the marinade, apply to the ribs and chill: check
  • make the crust for the torta della nonna and chill: check
  • make the avocado, lime and cornmeal pancakes with salsa and lime cream and sit down to a nice dinner: check
  • enjoy some wine with said dinner: check
  • get out the next-step ingredients for the torta in case additional inspo hits: check

I needed that.

To be made...

I am having a crazy intense yen for some torta della nonna, I think because I never had a really great one in Italy which left me disappointed, to say the least. So, I will be making one pronto. As well, I just came across a recipe for avocado, cornmeal and lime cakes dressed with tomato, red onion and lime cream. Right?! And lastly, T bought a Groupon for some Ibérico ribs so I just picked up a large rack of them. Not much of a rib girl, I am, nonetheless, determined to enjoy these puppies. Apparently, this Ibérico de bellota breed is a Spanish hog which, during the fattening season, feeds almost exclusively on acorns. These ribs are supposed to be incredibly tender and flavorful, so with them I'm going to make a Sticky Balsamic Rib recipe I've found. Sounds good!
