Yummy entree ideas for summer

As the heat turns up and the produce confirms summer’s appearance, I remembered two of our favorite meals (among many!) from this time last year. First is Summer Beef Salad a la my dear friend of more than a decade, Donna. Think cold roast beef, avocados, red onions, tomatoes, steamed then chilled potatoes and an easy mustard dressing. You marinate for a few hours and serve, and its simplicity and flavor are really divine.

Second is a recipe for Corn Pesto that I came across in Bon Appetit. Tom and I really loved it, and then I made it for my cousin Jeff, and he concurred. I’ll make and post the recipes soon (with full attribution, DD!).

Has anyone read this yet today? While I encourage couples to work hard on their marriage and not throw in the towel for any old reason, I also believe that sometimes divorce is definitely the best decision. I find it troubling and sad that many of the women in this article feel so stigmatized by the dissolution of their marriages.
