Fabulous dip that can be made in 5 minutes

Friends, as I’ve already been up for almost three hours, Tom is out of town, we have good leftovers, and I have a meeting tonight, it is extremely unlikely that I’m going to do any real cooking. However, one dear reader asked for some more in the way of easy appetizers/dips that are good at parties and/or can be made ahead. This dip is all of the above + delicious.

T and I were introduced to this years ago in Cambridge by our friends, Mandy and Ethan. Here it is: Artichoke-Olive Dip

1 can artichoke hearts, squeezed of excess liquid
8 large, garlic-stuffed green olives
scant 1/4 c EVOO
5 stems parsley, just leaves

Put all ingredients in a food processor and blend. Put in a bowl and serve with pita chips, grilled pita, fresh veggies, etc.

Feeling peevish at 5:40a is no way to start the day

Really?! Jack is off his sleep cycle and was counting loudly at 5:37a this morning. I woke up as he reached SIXTY-NINE in a very loud voice. Simultaneously, Oliver was awakened by the loud enumerating and started calling out, in quite the sing-songy voice I might add, for mommy, milk and “wash hands IN the SINK.” From what I can discern in my irked, hazy, head-buried-in-pillow state, Jack is now doing some sort of construction in his room, and O is singing and threatening a poopie.And the day begins…

Pretty sauce, I don’t love it on potatoes, the chard cakes were lovely but didn’t hold together terribly well. I think I do best with Yotam’s non-cake recipes. Don’t get me wrong, T and I ate every bit of these and enjoyed them with a nice French rose’, but I’m just saying, these and the fava bean burgers were not my strengths.

Tom is oddly good at random trivia. Really, it’s weird.
