Holy (literally) granola!

One of the treats at my birthday breakfast hosted by foodie friend C was a magnificent homemade granola. The recipe, a Food52 gem, is easy as pie and I don't know why, after making it once, one would EVER buy granola again. It is unreal: perfectly crisp, just sweet and savory enough, both complex and flexible. Truly, it's outstanding. So, I finally made my own batch today, subbing dried cherries for the coconut (though I used a smaller amount of cherries than Davis calls for coconut) as I detest coconut in my granola, and adding a good sprinkle of cinnamon. Wow is all I can say. Wow! olive oil and maple granola
