Apple butter making has begun

I'm pretty excited about jumping into apple butter. At present, the apples are boiling away on the stove in a mix of apple cider and water. Once the fruit has broken down and separated from the peels, you remove all peels, measure the puree, add some sugar and spices, and simmer for hours. What if I made an apple-butter & apple tart? What about a sandwich of apple butter and roast pork or chicken? The possibilities are endless here. Will let you know how it goes!
