Yield: 4-5 patties
- 1 pound fresh salmon (I use sockeye or coho), finely diced or ground
- 1/2 cup spinach (fresh or frozen)- if frozen, thawed and drained; if fresh, steamed, cooled, drained
- 1/3 - 1/2 cup crumbled feta
- salt and pepper
- 1/4 cup fresh breadcrumbs
- 1 egg, whisked
- 1-2 teaspoons Dijon mustard
- a squeeze of lemon juice
In a large bowl, mix everything together until well combined.
Form into patties and grill or freeze.
