- 1 peach, peeled, seeded and chopped
- 1/4 jalapeño, finely diced
- juice of 1/2 lime
- 1 teaspoon minced fresh ginger
- drizzle of extra virgin olive oil
Mix everything together in a bowl. Season with salt and pepper, and serve.
