Amanda Hesser writes a great column in the Sunday NYT magazine called Recipe Redux. She discusses an old recipe and then has a current chef recreate it in some neat way. I often like the original recipe best, and this one for Brandied Peaches from 1951 is truly wonderful. I love to serve the peaches over vanilla ice cream.
