Friends, as I’ve already been up for almost three hours, Tom is out of town, we have good leftovers, and I have a meeting tonight, it is extremely unlikely that I’m going to do any real cooking. However, one dear reader asked for some more in the way of easy appetizers/dips that are good at parties and/or can be made ahead. This dip is all of the above + delicious.
T and I were introduced to this years ago in Cambridge by our friends, Mandy and Ethan. Here it is: Artichoke-Olive Dip
1 can artichoke hearts, squeezed of excess liquid
8 large, garlic-stuffed green olives
scant 1/4 c EVOO
5 stems parsley, just leaves
Put all ingredients in a food processor and blend. Put in a bowl and serve with pita chips, grilled pita, fresh veggies, etc.
