Lest you think I would make such a hearty pasta and serve it alongside potato salad, even I, with my intense appetite today, would not make such a carb-heavy combo. Potato salad will be awesome tomorrow.
What I am going to make for the pasta’s mealtime friend is a quick saute of erba stella (an Italian green from the farmers market), snow peas and garlic, with some grated parm or pec on top, to tie the flavors in with the pasta. Delicioso! Cheers for meatless mondays!
