My DH has to leave at 5:30am tomorrow for a work trip. Tomorrow also happens to be his birthday, so we decided to do his dinner tonight but dessert tomorrow night after he gets home. Shrimp Creole was his choice of meal- he loves it. Instead of using my family recipe, I chose to follow Emeril's, and for the first time, I'm disappointed. He has you sauté the trinity in butter rather than canola oil, and there is no roux. I find this to be the primary flaw as the dish lacks a depth and complexity that you get in a roux-based version. Aah well. It's pretty, and certainly not bad, just thin. Dessert tomorrow will be key lime pie, another of T's favorites.
