Oh.my.god. Last night I put some garbanzo beans up to soak, intent on making hummus a la Ottolenghi and Tamimi's Jerusalem today. After making a large batch of shortbread dough in anticipation of Halloween cookies, I returned to the beans and am thrilled I did. Truly, this hummus is surreally delicious. It is creamy, FULL of flavor, both dense and light, simultaneously complex and simple; it is the gold standard of hummus, in my opinion.
A gal who eats hummus every day anyway, I am in heaven, plain and simple.
