Y'all, this spinach pie rocked! I would use less salt next time, but I loved the radicchio addition, and overall, this is just a darn good dish. And how could it not be with 7 eggs, 1 stick of butter, 2 pounds of spinach and so forth?! Ooh! For a (probably unnecessary) side, I made roasted potatoes and mushrooms with Meyer lemon zest and mint. Aren't these purple potatoes insanely pretty?
We also opened a terrific bottle of wine for a little celebration: the Juslyn 2005 Cab. Friends in Chicago on Sedgwick, you would LOVE this.
