Y'all, aren't these carrots just gorgeous? I don't have any plans for them yet, but based on appearance, I simply had to buy them.
For dinner, I was A) bored with what we'd been eating, and B) hungry for something that could ultimately be a whole meal in one bowl. So, I caramelized an onion, tossed in some chopped kale towards the end, then stirred in some cooked quinoa, slivered figs and crumbled blue cheese, as well as a bit of honey, a good dash of salt and of both Szechuan and black pepper. Not Tom's favorite, I actually felt it hit the spot. Unfortunately, I neglected to take a pic, but just envision a bowl of health + cheese.
