You make a good vegetable soup. Even though it's summer time, a hearty soup cooled down with a drizzle of fresh pesto just sounded perfect for tonight, especially in honor of Meatless Monday. So I found a recipe and worked from that- tomatoes, chick peas, chard, carrots, celery, onion, leek, garlic and zucchini are stewing together now. I also threw in some old Pecorino rinds and will serve over some slightly stale bread, as the Tuscans do with ribollita (one of my all-time favorite creations; my sister makes a fabulous one). Off to chop basil. The soup is smelling super good.
