I cannot even talk about how delicious this thyme pesto dish is. Holy hell! We just ate every bit of it.
The grilled bread- delish. I used Ciabatta. The preserved lemon cream- bliss. The only bummer was the need to peel, from the stems, a lot of thyme leaves. Nonetheless, I'd make this again STAT.
And, my purple potatoes were the epitome of fresh and tender. I steamed them and then tossed with tomatoes from my yard, basil, shallots, lemon juice, EVOO and Maldon (do you have/use Maldon? Great flake/finishing salt). Yum.
Off to pack (I hate to pack).
