This was absolutely lovely, and I will post my new-invention recipe in just a sec. I wanted to use the beans and squash and thought about a cold salad with a tangy vinaigrette: ooh, lemon and feta with roasted garlic and fresh herbs sounds nice. It was. Then I wanted something more and pondered which flavors I like with feta and lemon. How about za’atar and pine nuts? Yes. So here we have it. A raw squash, steamed bean salad with the aforementioned vinaigrette and za’atar-spiced pine nuts. I ate this entire bowl. For real!
PS- The name of the dish (as named in Em-i-lis’ Recipes) is longer than the time it takes to make it, so don’t fret.
