Delightful one-pot din-din

Tonight was a fairly regular cooking challenge: use only what you already have in your fridge/freezer/pantry. A chicken breast, fresh whey, coconut milk, brown rice, an onion, a bit of aging cauliflower, leftover garbanzo beans, Meyer lemon zest and a few other hints and hollers combined, over stages, in one pot to make a lovely, healthy meal for Mr. T and me. It's fun to experiment, and as long as you adhere to what needs to be cooked when, how long and with what, you'll rarely err. I may have later had too much leftover bread pudding, and now I really must go finish teacher gifts, but goodnight and happy almost-Wednesday to you all!
