Peeps, I invented a steak rub tonight that is fantastic. Take coriander seeds and white peppercorns, put into a coarse-grinder, and grind into a small bowl. Add a decent amount of kosher salt, some crushed red pepper flakes and some dried mint. Stir together and coat each filet with as much as you can. Fab. I'm not sure how it's possible, but I have become a pan-seared-oven-roast steak master(ess). They were a lovely complement to the Sour Mash Mash which I couldn't help but topping with the rest of the caramelized onions I had in the fridge. Fab. Off to watch the most recent Up All Night.
